Instructions
Pulled Pork
- Preheat oven to 275 degrees.
- Season the pork with salt, garlic powder, onion powder, paprika, cumin, chili powder, and black pepper.
- Heat the oil in a skillet over high heat. Sear the pork for about 5 minutes on each side until browned,
- Wrap pork loosely in foil, place in a baking pan and bake for 4-5 hours, or until pork falls apart.
- Remove from the oven and let it cool. Shred the pork with a fork removing any fat pieces and discard.
Tostones
- Peel the plantains
- Cut the plantains into 1 ½ inch thick slices.
- Heat 1-2 inches of cooking oil in a large frying pan over medium-high heat
- Using the bottom of a glass, gently flatten each plantain piece until flattened out about 1/4 inch thick.
- Add the plantain slices to the hot oil, and fry for 2-3 minutes on each side until golden brown.
- Remove plantains and place them on paper towels to drain.
Salsa
- Combine the diced mangoes, red onion, red bell pepper, jalapeno pepper, and cilantro in a mixing bowl.
- In a small mixing bowl, whisk together the lime juice, honey, and ground cumin. Season with salt & pepper if needed.
- Toss dressing over the mango mixture and toss well, set a side.
- Cut the Gayo Azul Queso Blanco into cubes.
- Heat a non-stick pan to medium-high and sear the Gayo Azul Queso Blanco on both sides for about 1 minute on each side or until golden brown.
Assemble the tostones,
- Place a spoonful of the pulled pork on each tostone. Add a cube of Gayo Azul Queso Blanco.
and top with the mango salsa.
15 Serve the tostones as an appetizer or a main course.
