Prepare the sauce. Warm a large skillet on medium heat, cook onions in a drizzle of olive oil until golden brown. Next add crushed tomatoes and beans, cooking on medium heat for 10 minutes, then simmer on low heat adding in salt and pepper to taste.
As the sauce is cooking, heat oven to 150F to keep serving plates warm.
Preparing the tortillas. In a large non-stick skillet on medium-high heat, heat the tortillas one by one for 1-2 minutes on each side until tortillas are heated through and softened.
Remove tortillas from skillet, using the same skillet used for tortillas, add 2 TBSP butter and crack 5 eggs and cook eggs sunny side up style for 3-4 minutes.
Platting. Place a tortilla on the warmed plate, then spoon sauce on tortilla and finishing by adding a fried egg with crumbled Gayo Azul® Cotija cheese on top. To garnish add chopped cilantro and/or a drizzle of hot sauce.
