Instructions
- In a large mixing bowl, combine the black beans, red kidney beans, chickpeas, red onion, jalapeño pepper, red bell pepper,
avocado, coleslaw mix, and cilantro.
- In a separate mixing bowl, whisk together the lime juice, olive oil, honey, salt, and pepper.
- Add the dressing to the bean mixture and toss lightly.
- Refrigerate for a couple of hours to let the flavors meld together.
- Meanwhile, cube the Gayo Azul Gouda and set aside.
- Top with gouda and tortilla strips before serving, Enjoy.
