Mix together the meat, the minced garlic, and the onion. Stir in the ketchup, cumin, and paprika. Form the mixture by hand into 6 round thin patties. Cook on a grill, flat griddle or in a frying pan.
Fritas should be cooked to medium-well done. When the frita is just about cooked through, reduce heat to medium-low, place on the Gayp Azul swiss cheese slices, and let the patties cook just a minute longer untilcheese melts.
While the fritas are frying, use a deep fat fryer or frying pan with a couple of inches of vegetable oil to fry the shoestring potatoes. Drain on paper towels and salt to taste. Keep warm.
